Ingredients: 10 medium carrots, peeled and cut into 2 cm pieces 4 sweet potatoes, peeled and cut into 1 cm chunks 1/4 cup dates 1/2 cup dried pitted prunes 1 cup dried apricot 2 tsp lemon juice 1 cup orange juice 1/4 cup honey 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1 1/2 tsp orange zest 1/4 tsp salt
Preparation Instruction
Preheat oven to 350. Bring water to a boil, and add sweet potatoes and carrots until JUST beginning to get tender. Drain well and add with all remaining ingredients to a large mixing bowl, and mix well. Cover with foil, and bake approximately 30 min then Uncover foil and broil it for another 5 minutes.
